Hi ladies,
I used to have my mom over for dinner all the time, but she has had health issues recently and has been put on a no salt, no sugar diet. I consider myself a good cook and can follow any recipe, but I don't have anything that I can imagine tasting good without adding salt to it. I am looking for something that would be a nice dinner (not a sloppy joe's type of thing). We do not eat pork or shellfish. If you have any recipes that would fit into this strict diet, they would be greatly appreciated. Thanks in advance.

Just do your best to keep it natural and let everyone add their own seasoning on the table. Whatever meat you prepare, just don't use salt, but do use LOTS OF GARLIC. For example marinate your chicken in olive oil, garlic, vinegar, lemon/lime juice and barbecue. Fresh vegetables steamed are delicious. I don't even need butter, but certainly you could put a healthy butter substitute on the table for those that want to add it. We often grill our vegetables or bake them in the oven after they have been tossed in nothing more than fresh garlic and olive oil. They are delicious.
Make your salad, but leave the dressing on the side so that Mom can have hers dry if she doesn't want the salt and sugar in the dressing. Maybe she has her own that she can bring. Baked potatoes or rice..........salt and whatever can be added at the table.
In this way your mom can avoid salt/sugar, but your family won't have to suffer!
I try to avoid artificial, but here is a recipe that might help you once in awhile. There are still natural sugars.....
It's meant to be served over grilled Salmon. I got it from a diabetic cookbook.
1 med fresh pineapple, peeled, cored and cut into 1 inch chunks
3/4 c. pineapple juice, 2 tbsp lime juice, 2 cloves minced garlic, 1/2 tsp jalapeno pepper minced, 2 tabsp cilantro minced, 1 tbsp cornstarch, 2 tbsp water, 2 tabsp artificial sweetner, free ground pepper
heat pineapple, pineap juice, lime juice, garlic and jalapeno to boiling in med saucepan. Reduce heat and simmer, uncovered for 5 minutes. Sitr in cilantro; heat to boiling. Mix cornstarch and cold water; stir in boiling mixture.
boil, stirring constantly, uncle mixture becomes thick and translucent. Remove from heat; cool 2 to 3 minutes. stir in sweetener and season to taste with pepper (and a dash of salt if she will allow)
