Hi Mamas! I got a recipe about 6 months ago for Amish Friendship Bread and it's AWESOME! Quite literally the best dessert bread I've ever had. My question is, can you bake the bread and freeze it? I know you can freeze the dough before hand & thaw it and bake but can you bake then freeze? I'm asking because I'm making yummy goodie boxes for everyone for Christmas. I want to make a large variety of flavors of the bread & mix n match everyones boxes so most people have something different. My problem is, one bag of dough makes 6 mini-loaves of one kind. This coming Saturday I have a Christmas party & need 9 goodie boxes. I'd like at least 3 kinds of bread in that but that would mean making 18 loaves for 9 people..... Knowing I have another Christmas party less than a week later, I'd like to make it & freeze it and then use it for the next party. Whatcha think???

You can freeze the bread. I always bake extra and then freeze and defrost when needed as I work full time.
Just make sure they are in proper freezer bags.
When you have time again you must share some recipes.

Sounds yummy! Yes you can freeze it, just make sure the bread is completly cooled and you use proper freezer bags getting as much air out as you can.
As Bernie K said when you get a chance please share the recipes.

yup. i made about 6-10 loaves at a time and freeze the ones i don't give away, as well as keeping a constant supply of starter in the freezer. you would never know they're not fresh from the oven.

Yep. It freezes really well. I like to slice first then freeze for myself, then I just get out a couple slices at a time with my tea or coffee :)

I'm pretty certain you can freeze it without much loss of quality after it's thawed.
Yes you can freeze it. My mom makes it all the time and freezes it to give to family or before guest come to visit. Hope that helps.
ok i don't have an answer for you but i have a favor..... an old neighbor gave us that recipe years ago and we LOVED it. the problem is we can't remeber the recipe now and tried making what we thought was it an it was NOT it!!! lol. so if you could let me know what the recipe is that would be AMAZING!!!!!! thanks soooo much
YES! My sister makes this every year for her employees and she works on it starting right after Thanksgiving, freezes them, making different varieties. Try using Pistachio pudding and also try Coconut Creme pudding, adding some pecans!!
This is a recipe for the starter bread.
This is the Amish Friendship Bread Starter Recipe that youll need to make the Amish Friendship Bread. It is very important to use plastic or wooden utensils and plastic or glass containers when making this. Do not use metal at all!
Ingredients:
1 pkg. active dry yeast
1/4 cup warm water (110°F)
1 cup all-purpose flour
1 cup white sugar
1 cup warm milk (110°F)
Directions:

In a small bowl, dissolve the yeast in warm water for about 10 minutes. Stir well.

In a 2 quart glass or plastic container, combine 1 cup sifted flour and 1 cup sugar. Mix thoroughly or the flour will get lumpy when you add the milk.

Slowly stir in warm milk and dissolved yeast mixture. Transfer to a one gallon ziploc bag. The mixture will get bubbly. Consider this Day 1 of the cycle, or the day you receive the starter.
Day 2: Mash the bag
Day 3: Mash the bag
Day 4: Mash the bag
Day 5: Mash the bag
Day 6: Add to bag 1cup flour, 1 cup sugar, 1 cup milk. Mash the bag.
Day 7: Mash the bag
Day 8: Mash the bag
Day 9: Mash the bag
Day 10: Pour contents of bag into a non-metal bowl. Add 1 cup flour, 1 cup sugar & 1 cup milk. Stir. Measure out 4 seperate batters of 1 cup each into 4 1gallon ziploc bags. Keep one for yourself and give the other 3 to friends along with a copy of this recipe. You will be making brread every 10 days. Use the remaining batter for baking (one cup left).
BAKING INSTRUCTIONS
Preheat oven to 325F
To the remaining batter in the bowl, add and mix together the following (non metal spoon)
3 eggs
1 cup veg oil
1/2 cup milk
1 tsp vanilla
1 cup sugar
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp baking powder
2 cups flour
1 large box vanilla pudding
*Depending on what types of bread you want, you may add raisins, bananas, carrots, nuts etc… *I will tell you my portions at the end
Grease 2 large loaf pans (or 6 mini loaf pans). In a small bowl mix 1/2 cup sugar & 1 1/2 tsp cinnamon. Dust pans with mixture. Pour batter evenly into loaf pans. Sprinkle remaining sugar/cinammon on top. Bake for 1 hour for large loaf pans or 45 min for mini loaf pans (or until toothpick comes out clean)
**Breads I have tried & that work well
Raisin - Add about 1 cup of raisins. Maybe 1 1/2 cups to the mixture.
Raisin/Walnut - Same but also add a small bag of chopped walnuts
Cherry - One bag of frozen, pitted, destemmed cherries. I also add a little Almond Extract for flavor. I ease up a little on the cinnamon that goes in the batter and in the pans at the end.
Cherry/Walnut - Same but also add a small bag of chopped walnuts
Blueberry - Cut the cinnamon in half in the batter and add in a small package of fresh blueberries. I do not use any cinnamon on the pan dusting.
Pumpkin - Add one can of pumpkin pie filling and 1/2 tsp ginger, 1/5 tsp cloves.
Those are the only we have made so far but are wanting to make apple/cinnamon (will grind some apple on a cheese grater & throw it in… haven’t tried yet) and the other is bananna/nut. I will mash up about 6 bananas & stick them in there with some nuts.
